Cherry Blossom Cake

The bride who wanted this cake brought me a photo of the design that looked like it had a brown snake crawling up the side of the tiers. I told her we could do better than that...



I've written about this kind of thing before, but when you do a cake that has branches on it, either use a branch mold to get the actual texture and thickness right, or just roll it out about ten times thinner than you think you should. Branches also have little places on them where a bud or a leaf would grow, so they're not totally uniform. Making sure to give it a little variation will prevent your cake from looking like a brown snake, or worse, is on it.
